Prepare Avocado Spread
Smash the avocado, add salt and pepper, and lime juice.
In a pan, sauté the mushrooms, spinach and sweet potato ribbons. It takes about 7 minutes to get the veggies right.
Boil water and add a couple dashes of turmeric once the water boils add the egg for 3-4 minutes depending on how runny you like it.
If you fry the egg make sure to use coconut oil and just add salt and pepper to taste.
Heat up the slices of sourdough bread in toaster, spread the avocado, add the veggies and top with poached egg. Sprinkle some Kite Hill Ricotta, Crushed Pepper and Lime.
