This recipe is a favorite in our household, my brothers also love it! It’s super easy to make, and I use a shortcut by buying canned spaghetti sauce instead of making it from scratch.
Here’s what you’ll need:
- Chicken Breasts (I usually buy the bulk wrapped chicken from Trader Joe’s)
- 2-3 Large Eggs
- 1 tablespoon Minced Garlic
- Salt
- Pepper
- 1/2 cup Panko Breadcrumbs
- 1/2 cup Italian Breadcrumbs
- 1 Teaspoon Garlic Powder
- Olive Oil
- Parmesan Cheese
- Mozzarella
- Basil
Steps:
- Preheat Oven to 400 Degrees
- In a bowl add 2-3 eggs, 1 tablespoon minced garlic, 1 teaspoon salt (or more, to taste), 1 teaspoon pepper, mix together
- add chicken into mixture until its completely coated
- cover with foil or plastic and put into the refrigerator to marinate for 15-30 minutes (this is the secret tip)
- In a 2nd Bowl add 1/2 cup of Panko breadcrumbs, 1/2 Italian breadcrumbs, 1/2 cup of parmesan cheese (freshly grated) , and 1 teaspoon of garlic powder, the mix
- after marinating take each chicken breast and dip into the breadcrumb mix and coat evenly on both sides
4. Heat a Pan with 1/2 cup of olive oil until its hot. Dip chicken breast to fry for about 4 minutes on each side. Repeat step with all chicken breasts
5. Next in a baking tray, place fried chicken breasts on it to start the preparation. Add tomato sauce, then mozzarella, and top off with parmesan cheese.
6. Bake for 20-25 minutes until cheese is bubbling and chicken is thoroughly cooked
While the chicken is baking, I like to make the spaghetti and salad. You can add any sides you’d like. I love serving this with spaghetti or rigatoni pasta.
Serve immediately, its best when it’s nice and hot out of the oven.
